Gelato is not ice cream. While the ingredients may be the same, there are a few key differences. First, authentic gelato is made with more milk and less cream than ice cream, so it has less fat. Second, gelato is churned more slowly, so it incorporates less air. And lastly, gelato is served at a temperature of about 10F – 15F degrees warmer than ice cream. With less fat, less air and a warmer serving temperature, the result is smoother on the tongue with a more intense flavor sensation. Delicious!
